
1. Tinned pumpkin.
If, like me, you are lucky enough to live near a Booths Supermarket (with their excellent range of beers) you'll find they sometimes stock

2. Buy a whole pumpkin in October before the rush for Halloween !
I buy mine from Costco but Tesco stock them too. You'll need a pressure cooker to steam the pumpkin as follows :
Cut the Pumpkin in half. Using a spoon, scoop out and discard the seeds and the stringy bits from inside each half.
Cut the remaining Pumpkin into smaller pieces and use a vegetable peeler to remove the hard outer skin.
You should be left with pumpkin pieces which resemble melon in consistency - steam these in your pressure cooker for 20 minutes,
then mash and drain as much water off as possible. When cool, pack into bags (425g = 15oz = 1 pie) and store in the freezer.
It's easy - just very, very time consuming. The older I get, the more that tinned pumpkin becomes my preferred option !
